Blanc de Blancs, Brut, 2018, Methode Traditionnelle, Domaine Sainte Rose

Picking this Chardonnay super early ensures the zingy acidity necessary to produce quality sparkling wine in our hot, dry, southern French climate. We used the method traditional to create this sparkling wine. We hand picked and whole bunch pressed the fruit to minimise extraction of colour and phenolics before cold settling and fermentation in temperature controlled stainless steel tanks. The wine underwent secondary fermentation in the bottle and then spent 12 months ageing on its lees prior to disgorgement.

Colour – Paleset straw gold with a fine bead.
Nose – Clean, crisp, citrus notes on the nose with underlying marzipan and apricot.
Palate – Great acidity with light fruit and a hint of biscuit.
